Best Breakfast! 

This is going to be one of the most simple, yet tastiest breakfast you’re going to make! Full of protein and healthy fats, its going to fill you up and keep you going until lunch. Its also not going to get boring, as you can put pretty much whatever you want in it/on it. What am I talking about I hear you ask?! …..a sweet omelette! 

You will need: 

– 2 eggs (or 3, if you’re more hungry!)

– 1 banana 

– Cinnamon 

– Agave nectar (or honey) 

– Peanut butter (or nutella, lotus spread, greek yogurt, granola…)

Optional addins: Any frozen fruit like blueberries or raspberries would work well, or any nuts you fancied. 

Step 1: 


Crack your eggs in a bowl and then add a generous sprinkling of cinnamon and mix it all together! 

Step 2: 

Pop the mixture in a hot pan. I haven’t used any oil as its a non stick pan but if you wanted to use any then feel free, fry light or coconut oil would work perfectly!

Step 3: 


Chop the banana and place on top of the egg mixture so theyre spaced out all over! Then leave your omelette to cook for about 3 or 4 mins, you need to wait until the mixture has cooked enough so the banana has started to set into the egg, or else flipping the thing over is a bit of a nightmare. 

This is where you can put on any extra add ins like blueberries or nuts!

Step 4: 


Get a spatular and put it underneath the omelette, then close your eyes, flip, and pray that it all stays together. The omelette flipping gods must have been with me this morning as I have had my fair share of disasters and rather ugly looking breakfasts! But don’t worry, if yours isnt successful, it doesn’t change the taste in the slightest!

Once it is turned over leave for another couple of minutes. 

Step 5: 



Pop on a plate and then add your toppings of choice! For me its peanut butter and agave nectar! 

Step 6: 

Enjoy your breakfast! I love how gooey and delicious the banana goes when you cook it, I could literally eat that all over again…
